sweet potato nachos

i love nachos.

and i’m always looking for healthier ways to enjoy the foods that i love. so i was excited to come across this recipe that uses sweet potato. sweet potatoes are good for you, especially when comparing to chips. no real measurements in this recipe, make as much or as little as you like.

what you’ll need (note all cooking times are based on my gas stove):

  • sweet potato- sliced
  • red onions- diced
  • cheddar cheese
  • sour cream
  • guacamole 
  • salsa
  • olive oil
  • salt to taste
  • 1/8 teaspoon cumin
  • a pinch of chipotle chili powder
  • optional
    • jalapeño 
    • cilantro
  1. preheat your oven to 350. slice the sweet potato into 1/8 discs (that’s where having that mandolin slicer i never thought i would use came in handy). coat with just enough olive oil to cover everything in a thin layer.
  2. season with salt, cumin, and chipotle chili powder and place on a single layer in a pan, somewhat spread out. cook for about 10 minutes until slightly browned. flip over for another 10 minutes.
  3. place the sweet potato rounds closer together, sprinkle as much cheese as you like and leave in the oven to melt for about another 1-2 minutes.

add whatever toppings floats your boat. i used sour cream, store bought salsa, homemade guacamole, fresh jalapeño, red onion, cilantro.
